This lightly sweet and butterscotch-like cocktail (name after the original bicycle with the large front wheel) is made with Averna, Luxardo Maraschino, and Victoria Gin, a citrusy and herbal gin that's distilled with local ingredients in Victoria, BC. If you can't find Victoria Gin, Beefeater makes a fine substitute.

  • 1 1/2 ounce Victoria Gin
  • 1/2 ounce Averna
  • 1/4 ounce Luxardo Maraschino Liqueur
  • 1 dash orange bitters

    Fill a mixing glass with ice and add all ingredients. Stir for 15 seconds, then strain into chilled cocktail glass. Serve straight up.
