This ice cream is light and tart, as any good frozen yogurt should be, but with a deep, floral richness from the honey and a bright, herbaceous finish.


  • 1 quart whole milk plain yogurt
  • 1/2 cup honey
  • 1/4 cup white sugar
  • Zest of one lemon
  • Juice of 1/2 lemon
  • 2 tablespoons fresh thyme leaves

    In a mixing bowl, whisk all the ingredients together. Adjust sugar and lemon juice to taste.

    Spin in your ice cream machine, and enjoy!
