Ingredients
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 16 tablespoons unsalted butter, at room temperature
- 1/4 cup sugar
- 2 teaspoons vanilla extract
- 2 cups chopped pecans
- Confectioners' sugar

Preheat oven to 325°F. Line two baking sheets with parchment paper.

In a small bowl, whisk together flour and salt.

In a large bowl, beat together butter and sugar until creamy, about 3 minutes.

Stir in flour mixture until combined. Stir in pecans.

Roll dough into 1-inch balls and place on prepared baking sheet. Bake until golden, about 25 minutes.

Fill a shallow bowl with confectioners' sugar. While cookies are still hot, roll in confectioners' sugar to coat. Let cookies cool on a baking rack.
