Rye Maple Fizz

An autumnal take on the traditional fizz from Rickhouse in San Francisco.

Special equipment: cocktail shaker, microplane grater

Ingredients

yield: 1, active time 5 minutes, total time 5 minutes

  • 2 ounces rye (such as Michter's)
  • 3/4 ounce freshly squeezed lemon juice
  • 1/2 ounce Grade B maple syrup
  • 1/2 egg white
  • 2 dashes Old Fashioned Bitters (such as Fee Bros.)
  • ice
  • 1/2 ounce soda water
  • 1 cinnamon stick

Procedures

    Place rye, lemon juice, maple syrup, egg white, and bitters in a cocktail shaker. Shake for 10 seconds without ice.

    Fill shaker with ice and shake vigorously. Pour into a fizz glass.

  3. 3

    Top cocktail with soda water and freshly grated cinnamon.
