(So named because it makes use of Cynar from Italy, a Catholic nation.) It's a refreshing and bitter drink of Black Grouse Scotch shaken with the artichoke liqueur, lemon, and a sparing splash of simple syrup. The grapefruit really comes through—you might think there's juice in it—but it's just the oils and bitters, resulting in a grapefruity cocktail that's not at all juicelogged. Great for fans of bitters who want something a little smoother than an aperitif on the rocks.
Ingredients
- 1/4 ounce simple syrup
- 1/4 ounce lemon juice
- 3/4 ounce Cynar
- 1 1/2 ounces Black Grouse scotch
- Soda water
- Grapefruit twist, to garnish

Combine simple syrup, lemon juice, Cynar, and Scotch in shaker with ice. Shake vigorously. Strain into a rocks glass. Add a splash of soda. Squeeze grapefruit twist over top and use as garnish.
