Sunday Brunch: Potato Cakes

If you find yourself in the position of having too many leftover potatoes and not enough gravy, these simple cakes makes a quick crisp brunch. As they cook, the potatoes and cheese tend to get soft, so be gentle when flipping. A bloody mary and couple of potato cakes will surely take the edge off any sort of post-holiday drowsiness.

Ingredients
- 2 cups mashed potato
- 1/2 cup shredded cheese
- 1/3 cup sliced scallions
- kosher salt and cracked black pepper
- 4 tablespoons flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- butter for frying
- sour cream, to garnish
- sliced scallion, to garnish

Mix together mashed potatoes, cheese and scallions until thoroughly combined. Form potato mixture into 8 evenly sized patties. In separate trays, place flour, eggs and breadcrumbs; coat each patty in flour, then eggs, then breadcrumbs.

Heat a large skillet over medium high heat and add a knob of butter. Working in batches, fry patties until golden brown. Serve hot with a dollop of sour cream and more sliced scallions.
