Big Star's High Time Manhattan

New for fall, Big Star's High Time Manhattan takes full advantage of the Chicago taco-and-whiskey bar's House Selected Wild Turkey Kentucky Spirit, a single-barrel bourbon hand picked at the Wild Turkey distillery earlier this year by the bar staff for its distinctive richness and flavor. While you can't go out and buy a bottle of Big Star's own Kentucky Spirit, try making a High Time Manhattan at home using the Kentucky Spirit you find at your liquor store, or your favorite premium, high-proof bourbon.

Ingredients
- Splash Green Chartreuse
- 6 cubes ice
- Dash Fee Brothers Old Fashion Aromatic Bitters
- Heavy 1/2 ounce Amaro Averna
- Light 1/2 ounce Carpano Antica Forumla vermouth
- 2 ounces Wild Turkey Kentucky Spirit

Rinse an Old Fashioned glass with a splash of Green Chartreuse. Discard excess and set glass aside.

In a second Old Fashioned glass, add ingredients in the following order: three fresh ice cubes, a dash of Fee Brothers Old Fashion Aromatic Bitters, generous 1/2 ounce of Amaro Averna, skinny 1/2 ounce of Carpano Antica, and 2 ounces of Wild Turkey Kentucky Spirit. Stir with a barspoon for 20 seconds.

Add three ice cubes to the first, Chartreuse-rinsed Old Fashioned glass, then strain in contents of second glass.
