Salmon with Thyme Butter
Salmon gets a little richer when baked with thyme butter and shallots.

Ingredients
- 4 tablespoons butter, at room temperature
- 2 tablespoons chopped thyme
- 4 shallots, minced
- 2 pounds salmon, divided into 4 equal fillets
- Salt and pepper

Preheat oven to 400 degrees. In a small bowl, whisk together butter and thyme until well combined.

Tear off four pieces of aluminum foil, each double the size of a piece of salmon.

Place one fillet on each piece of foil. Divide butter into four parts and top each piece of salmon, first rubbing butter over the entire top of the fillet.

Sprinkle each fillet with chopped shallots. Season each fillet with salt and pepper.

Bring ends of foil up together at top of fillet and twist until sealed. Bake salmon until just cooked through, about 18-20 minutes.

Remove salmon from foil packet and serve warm.
