  • For the smoked honey:
  • 1 quart honey
  • 1 quart water
  • For the cocktail:
  • Ice
  • 1 ½ ounce Death’s Door White Whiskey
  • ½ ounce Matilde Peche
  • ½ ounce smoked honey
  • ½ oz lemon juice
  • 2 dashes peach bitters
  • Garnish: 1 sprig mint

    For the smoked honey: prepare stovetop smoker with wood chips. Mix honey with water until dissolved, place in shallow pan over wood chips and cover with lid. Place smoker on heat source according to manufacturer directions and allow honey mixture to sit with smoke for 30 minutes.

    For the cocktail: Fill a cocktail shaker with ice. Add white whiskey, Matilde peche, smoked honey, lemon juice, and bitters. Shake well and strain into ice-filled glass. Garnish with sprig of mint.
