An effervescent cocktail made with fortified wine from Bryn Lumsden of the Rob Roy in Seattle.
- 1 ounce pisco
- 1 ounce cream sherry
- 1/2 ounce fresh lemon juice
- 1/4 ounce fresh ginger juice
- 1/4 ounce simple syrup
- 1 dash Regan's Orange Bitters
- 1 dash Fee Brother's Peach Bitters
- 2 ounces soda
Fill a cocktail shaker with ice. Add pisco, sherry, lemon juice, ginger juice, and simple syrup. Shake 15 seconds. Strain into a highball glass. Add both bitters. Top off with soda.
