Ingredients

  • 8 slices firm white bread (preferably at least a few days old)
  • 2 cups water
  • 1/3 cup tarama (carp or cod roe)
  • 5 tablespoons lemon juice
  • 2 cups extra virgin olive oil

Directions

  1. 1.

    In a medium bowl, combine bread and water. Let bread soak for one minute then squeeze out all moisture and set aside.

  2. 2.

    Add tarama and 3 tablespoons lemon juice to the bowl of a food processor. Pulse until combined. Add the bread and remaining lemon juice and pulse until combined.

  3. 3.

    With motor running, add oil and blend until mixture is light and fluffy.
