Drinking in Season: Perfect Peach

There isn't much that beats a perfectly ripe, juicy peach on a summer day. With their fuzzy skin, blushing hues, and intoxicating aroma, peaches are a sign that summer is in full swing. When buying peaches, looks definitely matter. Keep an eye out for fuzzy, unblemished fruit that gives off a sweet scent and is slightly soft to the touch. That's going to give you a fruit that's bursting with flavor.

After using peaches in everything from salsas to French toast, I thought it was high time to create a peach-inspired cocktail. I muddled some peach slices and a few cherries, which add color and additional flavor, in the bottom of a cocktail shaker. To bring a little more depth to the cocktail I added a squeeze of lime juice, a little Demerara syrup, and the ultimate summer spirit, white rum. The result is a peach-hued cocktail that as pretty as it is tasty.

Note: for the Demerara syrup, mix equal parts Demerara sugar and water in a saucepan over medium heat until sugar dissolves. Let cool before using.
