Drinking in Season: Apricot and Mint Cocktail
One of the true pleasures of summer is the arrival of stone fruit. I find apricots, with their vibrant blushing-orange color and sweet, fragrant flesh, irresistible at this time of year. Especially if we're talking cocktails.
The color alone creates a cocktail that might just make you do a double-take, but as we know, looks aren't everything. To balance the sweetness of the fruit, I paired it with mint and gin to bring in a fresh, herbal flavor. The resulting cocktail is not only a looker, but one that might have you thinking about a second date.
