Benne Wafers

This recipe is adapted from King Arthur Flour. Though traditional Benne Wafers tend to be crisp, this version still has a little bit of soft chewiness.

Ingredients
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup (1 stick) unsalted butter
- 1 cup light brown sugar, firmly packed
- 2 teaspoons vanilla
- 1 egg
- 3/4 cup sesame seeds, lightly toasted

Preheat oven to 350°F. Line two large baking sheets with parchment paper.

In a medium mixing bowl combine flour, salt and baking soda. Mix thoroughly and set aside.

Cream together butter and sugar until light and fluffy. Add vanilla and egg until just combined. Slowly add in flour mixture and mix until thoroughly combined. Stir in sesame seeds.

Drop dough by heaping tablespoonfuls onto prepared baking sheets a couple of inches apart. Bake for 6-8 minutes or until golden brown. Cool for a minute on the pan and then transfer to wire rack to cool completely. Store in an airtight container.
