Cucumber and Basil Slush

With temperatures rising into the 90s and above, everyone is looking for a way to cool off. One of my favorite ways is with an icy beverage known as the slush—a simple combination of ice and liquid in a blender.

Since the temperature is dramatic, I figured even the slush needed to be taken up a notch by using the classic, cool flavor combination of cucumber and lime, brightened up with fresh basil leaves. The light flavor of cucumber feels instantly refreshing while the basil and lime bring a little energy to the drink. The addition of vodka gives this icy cocktail just enough kick to keep you on your toes without knocking you out.

The result is a cool—both in temperature and flavor—cocktail that will make even the hottest days bearable.

  • 1 kirby cucumber, sliced
  • 2 ounces freshly squeezed lime juice
  • 1/4 cup basil leaves
  • 3 tablespoons sugar
  • 1/4 cup vodka
  • 1/4 cup water
  • 3 1/2 cups ice
  • Garnish: cucumber slice

    Place all the ingredients in the blender. Using the ice crush setting, blend until all the ingredients are even and finely chopped, about 30 seconds.

    Pour the slush into a glass. Garnish with a cucumber slice and a straw.
