This cocktail from The Spotted Pig in NY is seriously refreshing on a hot day. The salt helps cut the grapefruit's bitterness, rather than drowning the grapefruit in sweetness.
- For the grapefruit-infused vodka:
- 1 large white grapefruit, preferably organic
- 1 750 mL bottle vodka
- For the cocktail:
- Maldon sea salt for rim
- 2 ounces grapefruit-infused vodka
- 4 ounces freshly squeezed grapefruit juice
To make the grapefruit-infused vodka, cut the grapefruit into 8 pieces. Put in a large resealable nonreactive container. Add vodka. Let sit for 1 week, stirring once a day. Taste and remove fruit when you've reached the desired grapefruit level.
For the cocktail: rim a highball glass with Maldon sea salt, then fill the glass with ice. Add infused vodka and grapefruit juice. Stir gently and serve.
