Another refreshing but sophisticated cocktail from The Spotted Pig. The tea acts as a bitter accent at the end of each sip.

- For the tea:
- 1 quart water, just under a boil
- 1 PG Tips tea bag
- 1 sprig of fresh mint
- For the cocktail:
- 3 ounces PG Tips tea (as brewed above)
- 1/2 ounce lemon juice
- 1/2 ounce simple syrup
- barspoon of orange marmalade
- 2 ounces Bulleit bourbon
- garnish: lemon wedge (optional)
In a resealable container or pitcher, add hot water, tea bag, and mint sprig. Let steep overnight.
For the cocktail: Combine 3 ounces brewed tea, lemon juice, simple syrup, orange marmalade, and bourbon in a cocktail shaker. Shake without ice.
Fill a Collins glass with ice, pour cocktail (unstrained) into glass. Top with lemon wedge if desired.
