- 1 medium cucumber, peeled and seeded
- 8 ounces cream cheese, softened
- 1/2 medium onion, finely grated
- Dash salt
- Dash white pepper
- Green food coloring
- 18 slices bread
Grate cucumber pulp. Use cheesecloth or a dish towel to squeeze out juice.
Combine cucumber with cream cheese, onion, salt and white pepper; mix thoroughly.
Add a very small amount (2 drops) of food coloring; just enough to turn the spread a pale green.
Divide spread among 9 slices of bread and top with other 9 slices.
Remove crusts and slice sandwiches diagonally.
