Note: Sometimes I don't use any sugar at all in the filling. If I have ripe fruit on hand, I like to let its natural sweetness do all the work. If it's not prime time for your fruit (and most any fruit could be substituted for apples) then add the sugar to help it along.
- For Filling:
- 4 granny smith apples, peeled, cored, and chopped into 1 inch cubes
- 2 tablespoons corn starch
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1/2 cup dark brown sugar
- For Topping:
- 1/2 cup old fashioned oats
- 1/2 cup all purpose flour
- 3/4 cup light brown sugar
- 1/2 teaspoon salt
- 1 1/2 sticks butter, cut into 1/2 inch dice
Adjust oven rack to middle position and preheat oven to 350°F. In a large bowl, mix together ingredients for filling. Spoon into a 3 quart baking dish.
In a medium bowl, mix together all ingredients for topping except butter. Add pieces of butter and blend mixture between your fingers until butter has become the size of peas. Spread/crumble topping over apple filling and bake until topping is golden brown, about 40 minutes.
