The Uncle Buck was inspired by the fantastic Hudson Buck cocktail served at Brooklyn's The Vanderbilt. While the quantities vary slightly, the main difference in the Uncle Buck is the inclusion of sparkling cider, which adds a lightness to the cocktail and a slight effervescence to help refresh the palate.
Be very delicate when using the Allspice Dram in this cocktail. A single drop adds an incredible complexity to the drink but any more than that can start to make things bitter. It's best to err on the side of caution.
- 2 ounces rye
- 1 ounce apple cider molasses
- 2 drops hot water
- 1 ounce ginger beer
- 1 ounce semi-dry cider
- 1 drop of Allspice Dram
Fill a rocks glass with ice. Pour the rye over the ice and stir gently.
Add two drops of hot water to the cider molasses and stir to loosen. Add cider molasses, Allspice Dram, and ginger beer to the glass. Stir until combined. Top with cider and serve.
