Strawberry Purée
If you have a Vitamix-style professional blender, you won't need to strain because the blender is so powerful. If you're like me and sad because you don't have a powerful blender, you'll have to push the mixture through a small strainer to get out the seeds.
Strawberry seeds aren't as bad as raspberry seeds, but they can wreck your carefully assembled drink.

Ingredients
- 1 pound fresh strawberries
- 1/3 cup simple syrup
- 1/3 cup water

Put the fruit in a blender or food processor. Add the simple syrup and water. Blend until the mixture is super smooth. Taste the purée. If you need to, add simple syrup until the purée tastes properly sweetened.
