Cakespy: Homemade Pudding Pops

Growing up in the 1980s, I was pretty sure what made Jell-O Pudding Pops so delicious: every batch had been lovingly made by Bill Cosby, naturally.

Now that I'm older and (arguably) wiser, I know that the secret behind that singular texture and flavor isn't Bill's secret family recipe. But what I didn't know was that these sweet summertime treats are, seriously, the easiest thing ever to make.

Even better? At-home varieties also offer the freedom to showcase less-celebrated pudding flavors (butterscotch or rice pudding pop, anyone?), or to create your own new flavor by making two-tone pops in complementary flavors. I had great success with the chocolate-pistachio combination shown above.

Ingredients

serves about 6 popsicles

  • 1 package (3.9 oz.) Jell-O Instant Pudding, in the flavor of your choosing (or for a two-tone variation, see note below)
  • 1 cup cold half and half
  • 1 cup cold milk
  • Note: To make the two-tone variation shown at the top of the post, make two batches of the above, using different flavors of Jell-O pudding; fill the bottom half of each cup with one flavor, and let set for about 5 minutes; pour the second flavor on top, insert popsicle sticks and cool as specified below. The two-tone pops will yield 12 popsicles.

Procedures

    Beat ingredients with a whisk until smooth and incorporated, 1-2 minutes by hand.

    Pour into 6 paper or plastic cups. Insert wooden pop stick or plastic spoon in center of each cup.

    Freeze for 5 hours or until firm. Peel off paper cups before serving.

Those were my favorite as a kid. I am totally making these - don't know why it never occurred to me to try to make my own!

This is timely, as I just rediscovered my mom's set of late 70s-early 80s Tupperware ice-pop molds; I'm going to have to give these a whirl. I think possibly the weirdest combo she came up with when I was a kid was butterscotch-root beer...I'll be giving those a miss.

Anybody try these with rice or soy milk? If so, let me know how your results are.

Mmmm...the possibilities: chocolate and banana, coconut and lemon, pistachio and rice pudding.

Gipsygrrl- I've used soymilk before and the pops froze just fine but had a less creamy texture as they melted while I was eating them. Gotta make sacrifices somewhere :)

y'know what else works? sticking a popsicle stick into a pre-made jell-o pudding cup and freezing it. So. good.

While this will be much better with actual dairy, IMO, you could susbtitute soy, almond, or rice milk for the milk, and coconut milk for the 1/2 & 1/2, to more closely replicate the fat balance and mouthfeel in the original recipe.

Sneakily, I noticed that @cakespy added half-and-half to the recipe, while the original Kraft version only uses cold milk!

I felt the same way about Bill Cosby as a kid. In fact, I remember eating pudding pops while watching "The Cosby Show" and how every package had a mix of vanilla, chocolate, and swirled pops. I wonder why no one ever thought to include a more extensive range of flavors, dip them in chocolate, or put cute little faces on them!

For a dairy free version of half and half...I have substituted Soy Creamer which still gives a really creamy consistency! It works great a substitute for dairy free ice cream as well!

I was just thinking of making my own pudding pops for an '80's/MTV party--perfect timing!

Soy works but make sure it's really cold. For whatever reason it doesn't set up as well as dairy

what about jello pops?

Well, I made them this weekend and they were delicious! Oreo/chocolate combo was a favorite. Next time I make them I'll probably do 1/2 cup half and half and 1 1/2 cups Milk.

I made them as well, I used butterscotch pudding and kept the half and half. Awesome, but I think coconut milk would be good too (and butterscotch goes great with coconut anyway!).

sounds pretty fattening w/half & half & whole milk, any ideas on lowering the calories, and can we use sugar-free instant mix?
coconut sounds great...I like the lite milk....

My two monsters... I mean toddlers are going to LOVE making and eating these. I'm going to use almond milk (lactose intolerance)
