Roasted Baby Mangoes with Vanilla Ice Cream

Ingredients

  • 4 baby mangoes, halved, pitted and peeled
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons Turbinado sugar
  • Vanilla ice cream
  • Chopped Georgia pecans

Directions

    Preheat oven to 375°F.

    In a heatproof dish sprayed with vegetable spray, place the mangoes, rounded side up. Brush with the butter and sprinkle with Turbinado sugar. Bake 20 minutes. Turn on the broiler. Broil the mango halves until they begin to brown, about 3-5 minutes. Do not walk away from broiler.

    Place a scoop of ice cream (or two) into a glass and add roasted mango halves. Sprinkle with chopped Georgia pecans.
