Oh, don't act surprised. It was really only a matter of time before Peeps, those pillowy pastel harbingers of spring, met the classic marshmallowy sandwich called Fluffernutter.
What may surprise and delight you, however, is that in my version, the peanut butter-and-Peeps mixture is sandwiched between two hefty slices of pound cake rather than white bread, to form a delectably decadent dessert sandwich.
The pound cake works beautifully on several levels—the sweetness works harmoniously with the Peeps, and the rich butteriness is perfect with the peanut butter. In fact, I'd like to humbly submit that it just may be the perfect lunchtime followup to a breakfast of Cadbury Creme Eggs Benedict.
Notes: Though it is not necessarily traditional, I found that placing half of a sliced banana in the sandwich was thoroughly enjoyable as well.
If you don't have a microwave, this can be done in a toaster oven as well, toasting the sandwich for about five minutes on medium heat or until the Peeps are lightly toasty around the edges. They won't melt quite as satisfyingly as they do in the microwave, but it's still tasty.

About This Recipe
- 2 slices pound cake, about 1 inch thick each (sturdy enough so that they won't fall crumble apart when handled)
- 2 peeps (I found that the rabbit-shaped ones work best because they are flatter and therefore easier to sandwich)
- 2 tablespoons peanut butter (smooth or chunky, your choice)
Place your two pound cake slices side by side.
Apply a thin layer of peanut butter to each side.
Place the Peeps on top of one of the slices. Place the other slice, peanut butter side down, on top of the Peep-ed slice.
Either microwave on high for about 10 seconds (or until your peeps are melty--just keep an eye on it). If the top slice has gone askew or popped off during the microwaving, gently put it back in place.
