Healthy & Delicious: Chicken with Citrus Sauce

I'm not necessarily one for New Years resolutions, but I ate a minimum of eight batches of cookies last month. Subsequently, my jeans are a little on the tight side. Sure, I could buy new pants, but first I have to take care of things like "health insurance" and "an apartment without strange smells coming from the walls."

Anyway, Chicken with Citrus Sauce is a good start to any 2010 resolution. It's a faster, lower-fat version of a dish from Food & Wine's January issue, which is chock full of recipes awaiting similar alterations. For this one, I essentially reduced the cooking oils and swapped in boneless, skinless chicken breast—a healthier alternative without compromising the taste. Chicken thighs would have worked just as well, as the fast-cooked poultry is essentially a vessel for the sauce.

About that sauce: it's both savory and citrusy, without being excessively tart. Undoubtedly the highlight of the meal, you'll want to sop it up with whatever's around, whether it be rice, a roll, or a dishtowel. If you want to skip sectioning the fruit, substituting fresh-squeezed orange and lime juice would work just as well.
