  • 1 (16-ounce) can chickpeas, drained and rinsed
  • Juice of 1 lemon
  • 2 cloves of garlic, peeled and crushed
  • 1/2 to 3/4 cup olive oil
  • 1 tablespoon Cajun seasoning (optional)

    Add chickpeas into the bowl of a food processor, along with lemon juice, garlic, and 1 tablespoon of Cajun seasoning if you want an extra kick.

    Begin to purée the mixture, slowly adding the olive oil through the feed tube of the food processor until an emulsion, or creamy consistency, forms.

    Season with salt and pepper to taste.
