Grilling: Bartlett Pears a la Mode

Each week Joshua Bousel of The Meatwave drops by with a recipe for you to grill over the weekend. Fire it up, Joshua!

There's no use in fighting it. You're going to break those New Years resolutions at some point, so why not sooner rather than later. If eating healthy was on your list, you may want to put that aside, at least for a night, and try out this excellent recipe for grilled Bartlett pears—a la mode, of course.

Pears, like so many fruits, just get better when grilled. A double boost of the natural sugars and a buttery, sugary coating crisp and sweeten the pears, forming a crackling crust. Topped with a nice big scoop of vanilla ice cream, this dessert has it all: hot and cold, sweet and tart, creamy and crisp, all together in one treat that's worth that first indulgence of the new year.

About This Recipe

Ingredients

  • 5 Bartlett pears
  • 1 stick butter
  • 1 1/2 cups brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons Mexican vanilla extract
  • 1 quart vanilla ice cream

Procedures

  1. 1

Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over the charcoal grate.

  2. 2

Cut pears into thick slices (4 to 5 per pear). Place slices evenly in a large bowl. Melt butter in a small saucepan over low heat. Pour melted butter over pears. Add brown sugar, cinnamon, and vanilla to the bowl and toss until pears are thoroughly coated with the mixture.

  3. 3

Place pears directly on the hot grill. Cook for 3 to 4 minutes on each side, until the nicely browned. Remove pears and place in individual dessert bowls. Pour remaining butter mixture into a medium, grill-safe saucepan. Place saucepan on grill and cook, stirring, until boiling. Remove from heat.

  4. 4

Place 2 scoops of vanilla ice cream over the pears in each bowl. Pour butter sauce over ice cream and serve.
