Ingredients
- Butter, for greasing
- 2 teaspoons superfine sugar
- 1/2 cup dark honey
- 2 teaspoons baking soda
- Generous 2 cups flour
- Grated zest of 1 orange
- 2 teaspoons ground mixed spices, such as anise, cinnamon, cloves and cardamom, ginger, nutmeg and pepper

Preheat the oven to 300°F and grease a loaf pan with butter.

Place the sugar, honey, and baking soda in a large pan with generous 1/3 cup water. Melt over low heat, stirring. Remove from the heat and let cool a little before stirring in the flour, orange zest, and spices. Half-fill the prepared loaf pan with the batter.

Cover with aluminum foil and bake for 1 1/2 hours.
