  • 2 tablespoons olive oil
  • 2 large yellow onions, coarsely chopped
  • 2 quarts chicken or vegetable stock
  • 1/2 cup natural, unsweetened peanut butter (I used Peanut Butter & Co. Old Fashioned Smooth)
  • 2 cups Libby Easy Pumpkin Pie Mix

  1. 1

Heat the olive oil in a large pot over a medium flame. Add the chopped onion and sauté until translucent.

  2. 2

Add the stock and bring to a simmer.

  3. 3

Add the peanut butter and stir until it is incorporated into the stock. Add the pumpkin and stir until smooth.

  4. 4

Let simmer for another five minutes and remove from heat.

  5. 5

Serve warm with a garnish of pumpkin seeds and chopped peanuts.
