Slippers in Garlic and Parsley Sauce

20090309-baharecipe.jpg

The ingredients for this recipe were purchased at Sea Breeze Fish Market, which you can read about on Serious Eats: New York.

Author's note: My distinguished panel of tasters thought that this dish tasted buttery, yet there is not a bit of butter in it!

- serves 4 appetizers -

Ingredients

1 1/2 pounds slipper lobsters, about 3/4 pound shelled (You may need to cut larger slippers in half to ensure that pieces are somewhat uniform, for even cooking.)
salt, pepper
1/2 cup olive oil
10 garlic cloves, finely chopped
1 teaspoon red pepper flakes
1/3 cup minced parsley
Juice from 1/2 lemon
Crusty bread, for serving

Procedure

1. Sprinkle slippers with salt and pepper.

2. Heat olive oil over medium-high heat; add the garlic. Cook until garlic is fragrant, but not browned. Add red pepper flakes.

3. Lower the heat slightly, and cook slippers, turning occasionally, until they are opaque and somewhat firm, 5 to 7 minutes.

4. Stir in parsley and lemon juice. Taste for seasoning, and serve with lots of crusty bread to soak up the sauce.
