Pancetta Crisps with Goat Cheese and Pear

Some recipes are just bacon delivery mechanisms. (Potato skins, hello?) But in this recipe, the bacon itself is the delivery mechanism—for tangy goat cheese and fresh pear.
To make pancetta crisps with goat cheese and pear, simply crisp slices of Italian bacon in the oven and top with the fruit and cheese. It'll be hard to go back to plain old crackers once you've tried these savory shards.
Pancetta Crisps with Goat Cheese and Pear

Adapted from The Bon Appétit Fast East Fresh Cookbook by Barbara Fairchild
Ingredients:
16 thin slices pancetta
16 teaspoons soft fresh goat cheese (from 5-ounce log)
2 very ripe small pears, halved, cored, cut into 1/4-inch-thick slices
Fresh thyme leaves
Procedure:
1. Preheat oven to 450°F. Place pancetta slices in single layer on large rimmed baking sheet. Sprinkle with pepper. Bake until golden, about 10 minutes. Using spatula, slide pancetta crisps onto platter.
2. Top each with 1 teaspoon goat cheese and 1 pear slice. Sprinkle with thyme.
