This is a very simple recipe with a minimum of ingredients to let the sweet crab flavor shine through.
- serves 4 as an appetizer, two as a main course -
1 pound picked Jonah crabmeat
1/2 teaspoon Old Bay Seasoning
2 dashes Trappey's Red Devil, or other hot sauce
1/2 cup mayonnaise
1/2 cup dry bread crumbs
Butter
Lemon wedges, for serving
Tartar sauce, optional
1. Dump crabmeat in a large bowl, and loosen gently with your hands, being careful not to break up the larger pieces.
2. Add seasoning and mayo; mix gently.
3. Add breadcrumbs, mixing until thoroughly distributed.
4. Shape into 4 cakes; chill for 20 minutes.
5. Lightly butter a nonstick pan and heat over medium to medium-high heat.
6. Cook crab cakes for 4 minutes, until lightly browned. Turn and cook 3 minutes more.
7. Serve with lemon wedges, and tartar sauce, if you'd like, but, please, no cocktail sauce!
