The Cartoon Kitchen: Vegetable Salad with Tarragon Mayo

Vegetable Salad with Tarragon Mayo

Ingredients

1 cup mayonnaise
1 cup yogurt
Juice of 1 lemon
Fresh tarragon, chopped
Salt and pepper, to taste
Broccoli
String beans
Carrots, julienned
Cherry tomatoes, sliced in half

Procedure

1. In a large bowl, combine the mayo, yogurt, lemon juice, a lot of tarrgon, and salt and pepper.

2. Briefly steam broccoli, string beans, carrots; toss vegetables in dressing, along with the cherry tomatoes.
