When Serious Eats New York contributor Tam Ngo mentioned this recipe for blueberry burgers, I thought what anyone else would think: "HUH?" Blueberry-flavored beef patties? The blueberries aren't included for flavor, but for their moisture-enhancing properties. According to Acme Instant Food and Four Obsessions, adding blueberries results in a burger that is amazingly flavorful and juicy without any added fat. The only tangible trace of blueberries is the dark skins in the patty.

1 1/4 pounds lean, grass-fed ground beef
1/2 cup frozen blueberries, thawed and chopped fine, either with a knife or in a food processor.
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon garlic powder
Combine all ingredients, making sure to incorporate the blueberries well with the beef without overworking the mixture. Form four loose patties and cook on a grill, grill pan, or frying pan; don't press burgers flat while cooking. Top with whatever ingredients you like. Serve burgers on toasted buns. Make sure you have plenty of napkins.
