Ingredients
- 1/2 medium onion, minced
- 2 cloves garlic
- 2 teaspoons grated lemon or lime peel
- 1 teaspoon ground coriander
- Pinch of cayenne pepper
- Peanut oil
- 1 teaspoon sugar
- 1/2 cup peanut butter
- Pinch of salt
- 3/4 cup milk
- 1/2 cup water
- Assorted vegetables such as cabbage, beans, carrots

Sauté the onion, garlic, coriander, and pinch of cayenne in a little peanut oil. Add the sugar, the peanut butter, a pinch of salt, the milk, 1/2 cup water, and the lemon or lime peel. Cook over medium-high heat, stirring often, for five minutes.

Briefly parboil a colorful assortment of vegetables: cabbage, beans, carrots, etc. Arrange them on a plate, and chill them in the refrigerator. Serve with the sauce on the side.
