Sunday Brunch for Father's Day: English Muffins with Cheddar and Bacon

It's Father's Day, right? The best thing as far as I'm concerned about Father's Day is that I get to eat exactly what I want all day. So to start my Father's Day off right, I have my son, Will, and my wife, Vicky, make me one of my all-time favorite sandwiches, cheddar and bacon on a well-toasted English muffin. The recipe that follows is no adaptation or affectation. It's just tangy, crunchy, porky, and seriously delicious.

Well-Toasted English Muffins with Cheddar and Bacon

- serves 4 -

Ingredients

8 strips of good bacon (Oscar Mayer Center Cut is readily available and quite delicious)
4 ounces of extra-sharp cheddar cheese (I like Grafton Village 2-year-old cheddar, but Cracker Barrel Extra Sharp will also do the trick)
4 Thomas' English Muffins

Procedure

1. Toast the English muffins until they are a lovely light brown color

2. Fry the bacon the way your dad likes it cooked (I like mine pliant verging on crisp)

3. Put enough grated cheese on each half of the English muffin to cover.

4. Put a slice of the cooked bacon on top of the cheese on each English muffin half

5. Put the English muffins back into the toaster oven, move the indicator on the toaster oven to top brown and wait until the cheese is all melted and bubbly.

Serve with fresh-squeezed orange juice. Happy Father's Day, serious eaters.

Pics I want pics!

This is even better if you toss the grated cheese with a little dry mustard and Worcestershire sauce before you put it on the English muffin. It's excellent any time of day.
