Laker fans, get yourself both colors of beets and roast them up for this easy, rah-rah dish honoring Game Six of the NBA Finals tonight. Rally together enough beets-eaters, and maybe the Lakers will even see Game Seven, defying the historical streak of basketball teams that were all unable to win after a 3-1 deficit.
None of them were eating enough color-coded veggies!
- 3 golden beets
- 3 deep red beets
- 1/3 cup of olive oil
- 3 large, fresh rosemary sprigs
- Sea salt
Preheat oven to 375°F.
Cut raw beets into cubes, then place them on a cookie sheet or roasting pan.
Drizzle beets with olive oil, sea salt, and rosemary, which should be spread evenly over beets.
Roast beets until tender, or about one hour.
Toss it all up, and root the Lakers onto victory!*
