The Cartoon Kitchen: Celery Root Purée

Celery Root Purée

Ingredients

1 whole celery root, peeled and cut into small cubes
1/2 cup hot milk
Butter
Black pepper

Procedure

1. Boil celery root in water until soft, 15 to 20 minutes.

2. Mash, then whip, with the hot milk, some butter, and black pepper, until smooth. Serve.

love the celery root, but prefer to add milk to the boiling water - it seems to coax out some more flavor.

I made this once, It was a lot of work - just getting a celery root peeled is pretty laborious. Unless i was being 'careful about my carbs' and desperately wanted to eat something mashed-potato-y, i wouldn't consider this worth my time.
