Lisa's Cold Chicken

Ingredients

1 whole chicken
Cilantro
Green onion
Sesame seeds or crushed peanuts (optional)
Hoisin sauce

Procedure

1. Place the chicken in a large stockpot; cover with water. Remove chicken, and boil water.

2. Return chicken to pot; bring to a boil again. Turn off heat; let chicken sit, cooling, for 45 minutes.

3. With your fingers, remove breast meat whole; slice across the grain. Arrange on platter; garnish with cold cilantro and green onion. Sprinkle with sesame seed or crushed peanuts. Serve with Chinese hoisin sauce on the side.
