Sunday Brunch: Moonstrips (Onion-Poppy) Matzo Brei

Passover always puts me in a Moonstrips frame of mind. What are Moonstrips? They're onion and poppy-flavored matzos made by Streit's and they are the tastiest matzos ever. They don't make a kosher for Passover version, but this matzo brei (matzo pancake-style omelet) tastes good any time of the year. This particular matzo brei recipe is adapted from The Jewish Holiday Kitchen by Joan Nathan.

Moonstrip Matzo Brei

- serves 4 -

Ingredients

3 Moonstrip matzos
2 large eggs
Salt to taste
2 tablespoons butter or chicken fat

Procedure

1. Break the matzos and soak in boiling water for 15 minutes. Drain and squeeze dry.

2. Add the eggs and salt to taste.

3. Taking spoonfuls of batter at a time, fry in the butter or chicken fat, patting the center down a bit. If you want larger matzo pancakes, just add more batter each time. Fry until golden brown on one side, then turn and fry on the other.

i've never heard of moonstrips! where do you buy them? can you get them anywhere on the UWS? i was just thinking that i wanted a plate of matzo brei -- now i'm definitely making it.


Question from a novice: is that the standard egg-to-matzo ratio? I've only had matzo brei a couple times, but I remember it eggier...

I usually figure 1 egg per matzo, so this does seem a bit light on the egg. But it's a pretty forgiving dish.

(Though, coming from a sweet-matzo-brei tradition -- serve it up with lots of cinnamon sugar, yum! -- the Moonstrip variation sounds exotic to me, & a little peculiar. Probably tasty, though. I'll have to try it.)

I usually use about two eggs to two or three boards of matzo...but that would feed one person....we like it with cottage cheese on the side and Sriracha Hot Chile Sauce on the brei itself...heavenly!
We are not from the sweet matzo brei eaters!
