- 3 Moonstrip matzos
- 2 large eggs
- Salt to taste
- 2 tablespoons butter or chicken fat
Break the matzos and soak in boiling water for 15 minutes. Drain and squeeze dry.
Add the eggs and salt to taste.
Taking spoonfuls of batter at a time, fry in the butter or chicken fat, patting the center down a bit. If you want larger matzo pancakes, just add more batter each time. Fry until golden brown on one side, then turn and fry on the other.
