The Cartoon Kitchen: Amaretti

This week's Cartoon Kitchen features Serious Eats' cartoonist in residence Larry Gonick's spin on amaretti, the classic ultra-light Italian cookie made with little more than almonds, egg whites, and sugar. —Ed Levine

Amaretti

Ingredients

Butter and flour, for baking sheet
2 egg whites
1 cup sugar
Salt
1 cup chopped or crushed almonds
3/4 teaspoons almond extract

Procedure

1. Butter a rimmed baking sheet and dust with flour, tapping away any excess; set aside. Beat 2 egg whites until frothy; slowly add 1 cup sugar and a touch salt, and beat to beat the band.

2. When quite thick, fold in the almonds and the almond extract.

3. Teaspoon onto the prepared baking sheet; let sit for 2 hours, and then bake at 350°F until pale brown, about 12 minutes.

4. Remove from oven and let cool on a cooling rack.

I am going to assume that using Amaretto instead of the extract would be acceptable?

MMMmmmm... one of the best cheesecakes I ever ate had a crust made from amaretti... so good!

Absolutely the best cookie EVER! I had no idea these were so easy, I can't wait to try making these!

Seems easy, would like to give a try : )
