The Cartoon Kitchen: Saffron Pasta with Walnut Sauce

Saffron Pasta with Walnut Sauce

Ingredients

For the pasta:
Saffron
1 cup water
3 cups Semolina flour
2 tablespoons Olive oil for the pasta
1 teaspoon salt

For the sauce:
1 cup walnut meats
6 ounces Olive oil for the sauce
2 tablespoons melted butter
1/4 cup milk
1 teaspoon sugar
1/4 cup grated Parmesan cheese

Procedure

1. Simmer 3 pinches Saffron in water and set aside 30 minutes. Combine with Semolina flour, olive oil, and salt.

2. Knead well and set aside 15 minutes. Knead again. Break into suitable pieces and run it through a pasta machine (dust with flour to prevent sticking).

3. For a sauce, puree walnut meats, olive oil, melted butter, milk, and sugar. Finish with grated Parmesan cheese. Boil noodles. Top with sauce (as it's rich).
