Kale Chips: Healthy Alternative to Potato Chips
Potato chips too unhealthy for you? Why not try kale chips? Yup, just take those cruciferous leaves, toss them with vinegar, salt, and oil, pop them in the oven and you've got yourself a healthy snack. Try the recipe from 28 cooks, who says you should like them even if you don't like kale since you'll mostly taste the salty flavor. [via tastespotting]

I accidentally discovered this last week when I was boiling some kale and a few leaves fell down under the pot near the gas flame. I discovered the leaves a bit later, noticed that they were crispy and chip-like, decided to go ahead and put one in my mouth, and it wasn't bad! A little fish-food-like, but okay...

I've been making these for years (because clearly, I am awesome). They do pretty much taste like crispy salt - and that's fine by me.
You can do the same thing with dulse, but I'm guessing there are even fewer people who like seaweed than kale.

Mmmmmmmmm, this sounds good. Granted, I already love kale as is, but crispy is always great. These would also be great as garnish, for soups, or on top of pan roasted fish. I have been doing this for a while with sage leaves. Freekin amazing by the way, you should try those too.

i discovered this myself a few weeks ago when i was feeling lazy and just stuck some kale on a baking sheet and threw it in the oven. it's really great.

I "discovered" Brussels sprout chips whence roasting the sprouts with olive oil and kosher salt. Add a little vinegar and they're awesome.

I see a whole new industry opening up before me. "Green Chips". Kale, spinach, collards..! I'm one of those freaks of nature who love ALL leafy green vegetables. Brussel sprouts, beet greens, whatever. Has anyone ever fried them like real potato chips? Oil, salt, etc??

I had fried rapini with a light batter at Josie's in Santa Monica about two month ago. Now, I make my own using a deep fryer and cavalo nero with a light rice flour and club soda tempura batter. Just a little salt and pepper on top, delicious. Sometimes for kicks, I'll sprinkle a little madras curry powder in the batter.

The truly are delicious! Heres another variation: instead of kale, try baby regular and curly Bok choy. In addition to tossing with salt and oil (or cooking spray, which I prefer), add into the mix paprika...not only will they taste like chips, but they'll have a barbecue flavored undertone as well. Great tasting and good for you too- score!

Central Market recently started carrying veggie chips in bulk--sliced and baked/roasted taro, carrot, green beans (whole), and sweet potato. I'm a total convert. Who needs potato chips? These are crunchy, still have the natural flavor of each vegetable, brought out deliciously by a little olive oil and salt, and....You know, it's just really hard not to stand in front of the bag and eat them by the handful, pretending all the while that you just want one more and then you'll go do something productive.
