Cook the Book: Brown's Nachos

20080128-texmexctb.pngWho doesn't love eating nachos while watching the Super Bowl? This recipe, adapted from Robb Walsh's Tex-Mex Cookbook, refers to Brown's Mexican Food on Hackberry Street in San Antonio. Nachos there come eight to an order and come in three styles: cheese; bean and cheese; bean, cheese, avocado. The portions here re-create Brown's serving style, but for a Super Bowl party, you'll obviously want to increase the dose, amigos (unless you're having the saddest Super Bowl party for one). Luckily, upping the yield is easy enough, since all ingredients scale on the same ratio. Or, better yet, make a couple batches of each variation here.

Brown's Nachos

Ingredients

8 large tortilla chips
8 teaspoons shredded cheddar cheese
8 jalapeño slices

Procedure

1. Heat the broiler. Meanwhile, place tortilla chips on a broiler pan, and add cheese to center of chip, being careful not to spill any on the pan (you don't want burning cheese sticking to it). Broil for 3 minutes or until cheese bubbles. (You've really got to watch these so you don't scorch the queso, yo.)

2. Serve on a plate (or serving platter, if scaling up recipe), along with jalapeño slices on the side.

Variations

Bean and Cheese

Spread a tablespoon of refried beans on each chip, then start with Step 1 above.

Gooey Nachos

Sub in half a slice of Kraft Singles for the cheddar.

Homemade Nacho Chips

Stack 3 corn tortillas on a cutting board; cut into quarters. Deep-fry in hot oil until crisp; drain. Sub these in, obviously, for the store-bought chips.

OMG! My brother has this book and every time I go to his house I pick it up. I finally got my own copy yesterday. I am looking forward to making the mole. I love mole but have had some terrible mole in restaurants.

I am definitely going to get a copy of this book, but this entry ranks up there with how to boil water.

Yeah, I know, CVilleBilly. Was trying to just put a stupid-easy recipe for Super Bowlers in a rush.

I disagree CVilleBilly. True it is very simple, however, nachos are a food subject to much abuse and excess, and this recipe brings them back home to their original and wonderful simplicity. How to boil water: a recipe.

I'll probably get blasted from all you Tex-Mex'ers out there for this blasphemy, but here goes...

Same procedure, but top the chips with chopped shrimp (already cooked, of course), crab and pepper jack shredded cheese. I've even used (gasp) imitation crab in a pinch. Broil until cheese is melted and serve hot with sour cream on the side and more jalapenos if you like.

People go nuts over these, seriously!
