The Cartoon Kitchen: Filbert Brownies

Filbert Brownies

Filberts are more commonly known as hazelnuts.

Ingredients

Hazelnuts, a couple handfuls
1 stick butter (1/4 pound)
2 ounces unsweetened chocolate
2 eggs
1 cup sugar
1 teaspoon vanilla
1/3 cup flour
1 teaspoon baking powder
2/3 cup ground hazelnuts

Procedure

1. In a blender, pulverize a couple handfuls of hazelnuts.

2. Melt 1 stick butter with 2 ounces chocolate. Meanwhile beat 2 eggs with 1 cup sugar and 1 teaspoon vanilla.

3. Combine 1/3 cup flour, 1 teaspoon baking powder, 2/3 cup ground nuts; blend into eggs. Stiffen with more hazelnut powder, if desired.

4. Bake in an 8-inch square pan for 30 minutes at 350°F.

Used ground almonds instead of the hazelnuts. Would recommend toasting the ground nuts before incorporating into the mix, also added a pinch of salt.
Brownies were good though the center puffed up a lot right out of the oven.
