I always love the idea of cooking Sunday supper for myself and Vicky and Will. Now that Will's off at college I still look forward to cooking a meal for Vicky on Sundays. It's a simple preparation and guaranteed to satisfy anyone's carnivorous urges. Utilizing Colicchio's method guarantees a nice caramelized exterior and a tender, juicy interior.The recipe serves two, but it is easily doubled.
