Video Recipe: Pork Souvlaki

Kefi Pork Souvlaki
Ingredients
5 oz Pork Tenderloin Cubed
1 cup extra virgin olive oil
½ cup red wine vinegar
½ bunch oregano
½ bunch thyme
1 cup tzatziki (puree of yogurt, cucumber, dill)
2 long bamboo skewers (soaked in water)
1 pita flatbread
Fresh iceberg lettuce
Fresh beefsteak tomato
grilled onions
Salt and pepper to taste
Procedure
1. Skewer pork cubes with bamboo skewer
2. Combine vinegar, oregano, fresh thyme, and olive oil, to make a rustic marinade/vinaigrette.
3. Marinate pork for 30 minutes prior to cooking.
4. Grill pork to medium and brush with the marinade while cooking, remove from grill and let it rest.
5. Brush pita with olive oil and warm on the grill
6. Place the grilled pork in the center of the pita garnish with grilled onions, iceberg lettuce, fresh diced tomatoes, and tzatziki sauce.
