Video Recipe: Portuguese Style Pork and Clams
Pork and clams are a classic Portuguese combination, and Ouest's Tom Valenti shows us just how easy it is to make at home. I always thought of pork and clams as a restaurant dish, but not anymore. - Ed Levine
Portuguese Style Pork and Clams
Ingredients
8 three oz. medallions of pork (cut from pork chops or pork roast)
3 tablespoons. extra virgin olive oil
1 medium Spanish onion, medium dice
2 medium beefsteak tomatoes, medium dice
6 cloves garlic, thinly sliced
2/3 cup white wine
1 tablespoon white vinegar
1/2 cup clam juice
Big pinch freshly chopped oregano or marjoram
Pinch of red pepper flakes
2 dozen small clams (such as Manilla or cockles)
2 tablespoons chopped fresh parsley
Procedure
1. In a large sauté pan heat oil, season pork with salt and pepper and sear over high heat, 2 minutes per side. Remove and reserve.
2. To the sauté pan, add garlic and onions, sweat about 2 minutes. Add tomatoes, sweat another minute.
3 .Deglaze pan with wine, vinegar and clam juice. About 2 minutes.
4 .Turn flame down to medium. Add clams and cover for 1 to 2 minutes, or until clams open.
5 .Add fresh herbs, and reserve pork medallions, simmer for about 2 minutes. Serve.
