Where to Find Duck Fat French Fries Across the Country

Duck, fat and fries are three words that please most people. Combining them is a very beautiful thing. Chef Amanda Freitag at New York City's The Harrison isn't the only one bathing spuds in quack-quack grease. She cuts hers with a malt vinegar mayo, given the duck fat's richness. According to Baltimore Sun critic Elizabeth Large, the duck fat "adds a texture and flavor only those who remember potato chips fried in lard can imagine." Despite the restaurant's name, the fries aren't oversalted, according to Large, and are served with a trio of aoilis: white truffle, chipotle and orange mango.

The Strip House in NYC has a duck fried potato that isn't a French fry but is very delicious. Great steak too.

One thing I miss about France is the ability to buy a nice, fat-covered magret. I always used the rendered fat to cook potatoes (or green beans, mmm). The duck breasts I've bought in the US don't have nearly as much fat, and it's a real shame.

Many Michael Mina restaurants have Duck Fat Fries. They are the amuse bouche at StripSteak at the MGM Grand in Vegas as well at the Bourbon Steak locations at the MGM Grand Detroit, in Scotsdale Arizona, and in Aventura Florida (near Miami). We also have them next door to Bourbon Steak in Detroit at Saltwater, when you order the Piedmontese Striploin. Yes, I work for Saltwater, but I can testify that I would buy these delicious duck fat fries, or frites canardes, if you will almost anywhere.

We had the duck fat fries at Joseph's Table in Taos , NM years back....wonderful restaurant....a juicy buffalo blue chees burger, DF fries with a great glass of bordeaux...heaven.
